Japanese Inspired Battenberg Cake with Cashew Marzipan

Would you like a spot of matcha tea with your black sesame – ginger scones?  By golly,  I’ve done it again! I’ve taken something traditional and went completely barmy on it! Okay, I wrote a whole entry in ‘Brit’ lingo back in ’09, and I’m not going to make any of you who remember suffer through it again.

However, I’ve taken a thoroughly British cake called a Battenberg Cake, first created to celebrate the marriage of Queen Victoria’s granddaughter, Princess Victoria, to husband Prince Louis of Battenberg, and infused it with Asian, mainly Japanese, flavors, and decorated it in kind.  I know one thing for sure – as tasty and pretty as it is, it would probably shock the tickety-boos out of the Queen if it was served to her at any tea or special event.

Zebra Stripes Cake from 2007, and Peanut Butter Cup Brownies

I’m sure you’ve seen the zebra stripes cake around the internet at some point in your surfing life.  I discovered it when only two results showed up in a yahoo search circa 2000, after I followed a photo of it. Amazing how there are now thousands of zebra stripes cakes on the internet! That said, I’m 100% sure you’ve seen peanut butter cup fudge brownies before, so no need to touch on those.

Before I get to either, a little preface.

The above is a transitional header and name (desserts and line drives was too long).  I still haven’t decided where I’m going to go with this, but I got sick of looking at that ugly, old header.

Back in January of 2011, my computer crashed.  The hard drive was annihilated.  I lost all of my photos. Some of those photos were of several amazing and somewhat laborious, treats, three of the treats that I especially mourn to this day.  One was a beautiful Tourte Milanese – layers of colorful, roasted red peppers, spinach, cheese, ham and softly scrambled, herbed eggs encased in golden puff pastry.  The other was a Gateau Basque, best described as a mix of a cake, cookie and pie, from the Basque region of France, filled with luscious almond pastry cream and homemade cherry jam.  The third was a 12-layer milk chocolate macadamia nougatine torte that I can’t even remember the recipe for because I didn’t write it down. PLUS, many other cool desserts and savories.

They were all so lovely, aesthetically, and exquisite in flavor, that I did everything I could with the dead hard drive, bringing it from place to place, to see what they could retrieve from it.

Peanut Butter Brown Sugar and Fudgy Chocolate Overnight Oatmeal

I don’t usually go for fads/trends, or follow rules when it comes to food.  In fact, I don’t abide by any rules when it comes to food.  I’ve been known to bake pumpkin pies in July, and I know some people may argue this, but there is NO discernible difference between using fresh roasted pumpkin puree and canned.  I’ve tested it many times over the years, and no one, I mean NO ONE, could tell the difference between the pumpkin pie using canned pumpkin and the pumpkin pie using fresh pumpkin.  As long as the canned pumpkin is pure, with no additives, it’s fine.

There..I said it, and I didn’t want to wait until Fall to say it.

By the way, did you know most canned pumpkin puree is actually Butternut or Hubbard squash. or a variety of squash not named pumpkin?  Yes, this includes the brand that starts with L.

Back to trends and fads in the food blogosphere.  I have seen overnight oats all over the place for months now.  Normally, I’d steer clear, because, again, I’m not a trendy person.  However, I need quick breakfasts because I don’t eat breakfast anywhere near as often as I should, and I’m sick of cold cereal, toast or smoothies (my freezer is jammed with smoothie packs), when I do.
